Reiki is...well that't is. Reiki just is. The best analogy I can think of is the Force. It is like a universal energy that surrounds everything and people who are attuned to it can use it to heal among other things.
This is a good website: Reiki Plain and Simple
I am sure that others can explain better than me, but I hope that this will at least help you.

I'd like to add that you can use it for healing on different levels, so not just physical healing, but also mental healing.
I think the website Phoenix posted explains it really well.
If you have any more questions, please feel free to ask!

Since I'm not into Reiki, at least not yet, perhaps my 2 cents will be of help... The way I've been told, Reiki is, as Phoenix says, "The Force". It is universal in two ways: It is a force that connects us to the spiritual Universe, and it's a force that is universal, that is we all have this force within us, it's basically what makes us tick, that gets us going, the "Fire of Life" if you will. Studying the Tarot, I find Reiki very much being connected to the pure energy of the Wands element of Fire.
Reiki healing, which is what we generally refer to as Reiki (although it is more than "just" healing too, it's more of a way of life, a philosophy), is learning how to tap into the source of this energy, this life force, to get access to it straight from the Universal source, and then you can either give it toyourself, to someone else, to animals or to plants and flowers. What's great about Reiki is that it's accessible for anyone, it's like a human "birthright", we just have to be attuned to the energy to be able to tap into it at will. Another thing that's great about it, is that it doesn't take YOUR energy to heal someone else, on the contrary the healer get's his or her fair share of the energy too!
Reiki healing is taught in three or four levels, called first, second and Master attunements. Some Masters divide the Master-level into Master and Master/Teacher, depending on whether one wants to give Reiki classes or not.
Hm, I hope I haven't got anything wrong here, this is the general idea I have gained from my "pre-attunement studies", I'm planning to take my first level this fall.
I'm sure all the Aeclectic Tarot Reiki Masters and other experts out there will correct me if I've got anything wrong here...!

it heals on the emotional, mental, physical, spiritual, conscious and sub-conscious levels in this life, your past lives and your future lives.
it is the energy that is in all living things.......universal life energy.
it is gentle, loving and wonderful :D
in light,
