The Valet Cups is facing the left-side of the card, and looking intently at his cup.
His scarf is rather odd...

2-Cavalier de EPEE : Going to the left.
3-Cavalier de COUPE : Going to the left.
4-Going to the left or to the right (so following the sequence or not )

In the Dodal it is the Valet of Batons who faces a different direction to the other three Valets.

The Valet of Batons moves in the opposite direction. So.... there's maybe a 'message' in this difference, a reason. What can it be? He is also the only Valet whose suit-emblem touches the ground.

The Valet of Cups = This is the only Valet who is hat-less. No hat.

1-In Majors we see a pattern of 4,because we have I II III IIII and then we have a V .
2-In Minors we have 4 suits and 4 Honours.
3-So cross related topic within.

-Sometimes I realized that numeration on the numerals are very inconsistent.
1-Just see or compares Noblet and Dodal.
Both have absence of card that was not numerate.
2-Simple negligence ?
3-Some intention within ?

1-Just see how EPEE draw a Mandorla as some EPEE numerals.
2-Yes,as XXI card.
That card as we know is the very last.
3-I think that this show the Mastermind of God showing his power mind.
So all the Universe is a God Mind invention.

I have seen it written here that there is some mystical reason that Roman numerals 1/11/111/1111 show the elements because it moves to V for five.

Well there is a more logical answer.
Originally, it was common to use IIII to represent four, because IV represented the Roman god Jupiter, whose Latin name, IVPPITER, begins with IV.

Roman numerals remained in common use until about the 15th century, when they were replaced by Arabic numerals (thought to have been introduced to Europe from al-Andalus, by way of Arab traders and arithmetic treatises, around the 11th century). (wikipedia)

Classical numbering is often used to suggest importance or timelessness, or in other cases where an alternate numbering system is useful for clarity.
This clarity in cards could be because straight line printing was easier and had a symmetry for cards that is also apparent on clock faces.
