The cards are originally from woodcuts, I think it was easier to identify an animal if it was done in white, in block cuts like that. Plus it would be less inking to do. The people were more important than the animals, so less fuss would have been paid to them. I think they basically bowed to the capabilites of the medium they used back then, and all more modern decks just followed suit. At least that'd be my guess.

Ther eis also a sense of purity with the color white. The use of brown and black for the two knights mentioned could be for quick identification of the card.

How about brown for earth/soil for Pentacles and black for wands???? Scorched earth, fast and furious like a wild fire?
