Trimming decks. Has anyone given it up?

Have you tried using sandpaper to even the edges? A fine grade of sandpaper works well for me. I use a regular fine grade (I think maybe 300-500 grit) that you can buy at any hardware store to start with and then I finish off the edges with an ultra fine sandpaper that you can only get at an automotive supply store. I think this ultra fine paper is something like 1500 grit. You can barely feel any roughness to the paper. It gives the deck that nice polished edge that you find in some decks. I've only trimmed one deck but my trimmed Thoth deck shuffles very well after trimming.
